Ricotta Pancake Recipe from of 11-05-2019
THE cottage cheese pancakes they are a variation on the theme, a little Italianized, if you like, of the traditional Anglo-Saxon pancakes. The pancakes are always delicious, in my opinion, but with the addition of ricotta and a grated lemon in the dough they become even more special: more delicate and fluffy, they practically melt in your mouth! As always, you can dress and decorate them with the topping of your choice. This time I opted for a classic agave syrup, enriching it with just a couple of raspberries, which as always gave the perfect extra touch;)
How to make cottage cheese pancakes
Put all the dry ingredients in a bowl and mix.
Do the same for the liquid ingredients, leaving the ricotta aside.
Pour these over the powders and mix carefully.
Finally, add the ricotta, incorporating it with a whisk to obtain a smooth and lump-free batter.
Melt a knob of butter in a non-stick pan and start cooking the pancakes, one ladle at a time.
Wait for the dough to harden and bubbles start to form on the surface before turning it to cook the second side as well.
The ricotta pancakes are ready: stack them on a plate, decorate as you like and serve!

How to prepare: Pancakes with ricotta
First you will need to prepare the batter. All together: in a bowl mix sifted flour with baking powder and baking soda.
Child: in another bowl have fun breaking the two eggs, but it is important to do this with a little delicacy so that the pieces of shell do not end up in the dough. Parents: with a whisk, beat the eggs well until they are frothy, this will help to obtain a soft consistency of the pancake.
Child: add ricotta, sugar, lemon juice, a teaspoon of grated zest, oil and milk to the previously beaten eggs, then mix well. All together: add the flour and mix with a spoon until the mixture is smooth and creamy.
Parents: heat a pan and grease it with a little butter or, if you prefer, with oil. All together: pour a spoonful of batter spreading it with the back of the spoon until you get a 9/10 cm diameter disc. When the pancake is golden on one side, it will take 40/50 seconds, turn it over to obtain the same cooking on the other, then transfer it to a plate and cover it to keep it warm.

1) Transfer 250 g of light ricotta in a bowl and add 1 teaspoon of dolcifier and 15 g of bitter cocoa in powder.
2) Mix well the compound with ricotta, then place the bowl in the freezer for 10-15 minutes to cool everything down.
3) Using 2 teaspoons, create many balls as big as small walnuts and roll them on a sheet of baking paper with plenty cocoa.

Pancake with ricotta and salad of strawberries, pistachios and honey
What you need for four (or two very tasty)
250 grams of ricotta
50 g of flour
20 g sugar
20 g butter
Separate the yolks from the whites and assembles them to stiff peaks.
Wash and dry lime, grated zest of a lime and keep aside.
Melt the butter in the microwave for a few seconds.
In another bowl mix the ricotta with the egg yolks, sugar, lime zest, flour, butter and a pinch of salt.
Add the egg whites, stirring gently from top to bottom.
In a pan make melt a bit 'of butter and pour spoonfuls of dough trying to form pancakes of 8 cm.
Proceed in the same way to finish up the compound.
Just on the surface of the bubbles are formed spirals on the other side and cook for a few seconds.
Keep warm separated by sheets of wax paper and prepare a salad of strawberries.
Wash, dry and cut the strawberries into small pieces.
Squeeze the lime into a bowl, add two tablespoons of honey and stir.
Chop coarsely the pistachios.
Cut the mint leaves.
In a bowl mix the strawberries with the lime juice and honey, add the mint leaves.
Dial towers pancakes: pancakes per person, and uses three intervals each layer with the salad of strawberries and a sprinkling of chopped pistachios.
Finish with chopped pistachios and the rest of the lime juice and honey.
Serves at once.

Ricotta pancakes, sweet and multicolored
And who imagined that the secret would be ricotta!
I swear to you, never eat such good pancakes & # 8230 finally a tasty dough even natural, without necessarily having to cover them with spreadable creams to make them sweeter.
The ideal basic recipe: to be left simple, even accompanied only by fresh fruit and honey, or to be stuffed with other ingredients in the dough (chopped fruit, chocolate chips, dried fruit, etc.). I wanted to give a touch of color the flavor is not altered but the rainbow effect makes them more fun.
Ricotta pancakes are fluffy and not dry at all. We ate them the next day too and they were delicate in the same way. Another point in favor: you will not notice that annoying hint of egg, present in some recipes, they will also give you the right level of sweetness.
It goes without saying that the tastier the ricotta, the better your pancakes will taste. Use the cow's milk, creamy and tasty.

- 200 g of cow's milk ricotta
- 70 g of sugar
- 3 whole eggs
- 100 ml of milk
- 100 ml of cream (or milk)
- 130 g of flour 00
- 1/2 teaspoon of vanilla yeast
- Vegetable dyes °
- 1 knob of butter
- Honey (or Syrup)
- Blueberries (or Fresh fruit)
- You can use gods dyes in gel, powder or vegetable dyes, here are the doses for the latter: 1 g green, 1 g black, 2 g yellow, 3 g red.
If you prefer, you can omit the dyes or replace them with a 2 teaspoon of cocoa sweetened.
- In a bowl, you work ricotta with sugar and sifted yeast. Add the eggs e jumbled up until a homogeneous mixture is obtained.
- Add: milk, cream, and flour. Jumbled up again with a whisk until the ingredients have blended.
- Divide the mixture in 4 bowls * e add a different dye for each bowl. Jumbled up & # 8211 with different spoons & # 8211 until the mixture is evenly colored.
- Warm up a non-stick frying pan e dissolve little butter inside. Pour a ladle of compost e cook the pancake over medium-low heat on both sides **.
- Serve the ricotta pancakes stacked on top of each other, then add some fresh fruit on top e paid honey or syrup.
* The number of bowls varies depending on the amount of dyes used is optional, you can also prepare the ricotta pancakes without dyes.
** Turn the pancake as soon as it starts to make small bubbles on the surface. For each pancake it will take about a minute total cooking.

Ricotta can become the basic ingredient to prepare an excellent one hot soup: after having prepared the broth, simply mix ricotta, eggs, grated Parmesan cheese and pepper by cooking everything in a bain-marie in the oven in order to solidify the mixture and be able to cut it into small cubes, which will then be mixed with the broth.
Easy, fast and nutritious, the ricotta omelette it is made by combining beaten eggs, Parmesan, a little oil, ricotta and herbs to taste. The mixture is cooked in a hot oven for about thirty minutes.
How to make ricotta and lemon pancakes
In a bowl, mix the dry ingredients: flour, granulated sugar, yeast, baking soda and salt (1). In another bowl, mix milk, ricotta, eggs and vanilla, with an electric whisk or by hand, until they are well blended (2). Add the melted butter (3), zest and lemon juice to the milk mixture, stirring until the ingredients are perfectly blended. If the compound is reduced, do not worry: it is normal that this is the case.
Preheat a non-stick skillet over moderately high heat. Make a hole in the center of the bowl with the dry ingredients and pour in the contents of the liquid mix, mixing everything (4). Pour your pancakes with a sieve onto the pan previously greased with a thin layer of butter (5) and cook until golden, then turn them gently on the other side. Once ready, serve your pancakes still hot sprinkling them with maple syrup (6)

It is a rich variant of the American pancake recipe that involves adding ricotta directly into the dough, so as to make it even softer and fluffier.
If you can't wait to taste some soft and tasty ricotta pancakes too, to start the day with an extra gear, you just have to prepare them following the recipe that you find illustrated below.
The first thing to do when making pancakes is to put the solid and liquid ingredients in two separate bowls. Therefore, take two bowls and pour in one the flour, the sugar, a pinch of salt and the baking powder and in the other the egg, the Fresh Chef Cream and the butter that you have previously melted in the microwave and left to cool.
Start working the liquid ingredients with a whisk, then add, little by little, the solid ones, continuing to mix to mix the mixture well and avoid the formation of lumps.
When you have obtained a nice smooth mixture, open the vanilla pod with the tip of the knife, take the seeds and add them to the mixture. Also add the ricotta and slowly mix everything with a spoon to dilute it.

Let the pancake cook until it forms bubbles on the surface, then turn it over and cook it for a couple of minutes on the other side as well. Once ready, remove the pancake from the pan and transfer it to a plate.
Proceed in this way until you have used up all the mixture, taking care to keep the dish with the pancakes with ricotta warm in the warm oven.
When all your desserts are ready, bring them to the table and, to make them even more delicious, sprinkle them with maple syrup.
