Pui Hunter

I tried several variants of chicken cacciatore and this is one of them.

  • 2-3 cloves of garlic
  • 1/2 cup white wine
  • 2 pieces of chicken breast
  • 1 cup onion, chopped
  • 1 cup mushrooms, cut into slices
  • Italian condiment
  • salt pepper
  • 1 cup pasta sauce or marinara sauce

Servings: 4

Preparation time: less than 60 minutes

HOW TO PREPARE RECIPE Chicken Hunter:

Put the garlic, onion, wine and chicken breast, cut into cubes over medium heat.

When the chicken is caramelized, add the mushrooms and keep for another 5 minutes.

Add the spaghetti sauce and keep it on the fire until it warms up.

Serve with spaghetti or pasta.

Ingredients for 4 people:

  • 6 chicken legs
  • 3 onions
  • 2 celery celery threads
  • 3 carrots
  • 3 cloves of garlic
  • 1 can of diced tomatoes
  • 50 ml of olive oil
  • 250 ml of red wine
  • 1 red pepper
  • 1 rosemary thread
  • 1 bunch of green parsley
  • salt
  • pepper
  • Chop the vegetables (carrots, celery, garlic, pepper, onion) to taste. I cut the carrots into rounds and cut the rest of the vegetables into cubes.
  • Saute the vegetables in olive oil, add the chicken legs and stir continuously until the legs are slightly browned.
  • Pour the wine, let it boil for a few minutes until the alcohol in the wine evaporates.
  • Add the canned tomatoes and another 500 ml of water.
  • Season with salt, pepper, rosemary.
  • After 20 minutes, when the thighs are penetrated, add chopped fresh parsley leaves.
  • Serve with polenta, mashed potatoes or pasta.

Ingredients for game (hunter):

  • 1 kg of chicken, preferably with bone for more flavor, I had upper thighs
  • 1 & # 8211 2 onions
  • optional, 1 carrot, 1/4 small celery, I use
  • 4 & # 8211 5 cloves of garlic
  • 250 & # 8211 300 g mushrooms, preferably forest, the classic recipe mentions mushrooms I did not have at home, I used 250 g brown mushrooms and 10 g dehydrated trumpet (I hydrated them before use)
  • 2 bell peppers
  • 400 & # 8211 500 g chopped tomatoes or mashed tomatoes
  • optional, if the preparation still requires liquid, 100 & # 8211 200 ml chicken / vegetable / hot water soup
  • optionally, a cup of dry wine for deglazing
  • 2 tablespoons cooking oil
  • salt pepper
  • fresh parsley, basil, rosemary

You put cacciatore with nothing hunting in it

Cacciatore with chicken sounds a bit like our beef salad to me. Which is mostly chicken. The only hunting thing here (hunter in Italian it means hunter) is that you have to look seriously for some chicks that, with the help of God and the farm manager, may have seen some sun. From the natural one, from the sky.

I understand that the initial recipe was with rabbit, but the Italians accepted this compromise, cacciatore with chicken, and they did well. That I was not just looking for rabbits.

There are many variations on this recipe as well. Some put olives, others put mushrooms, white wine or red wine, I have seen recipes with anchovy fillets, but the preparation is always the same.

It's not hard to make, I really like how the flavors are combined here, the recipe is famous and it's worth it, I'd say it's perfect for the moments when people come to visit you.

If you pronounce CA CCIA TORE with a specific accent, with all the long syllables, you will give the impression that you are also good.

INGREDIENTS (for two portions):

  • two chicken legs, all with skin and bone
  • a tablespoon of olive oil
  • a red pepper (or half red, half yellow)
  • hot peppers, according to the taste and resistance of your lords' taste buds
  • 85 ml of red wine
  • a clove of garlic
  • a handful of good quality black olives
  • a rosemary branch
  • parsley

For the sauce:

  • 400 grams of tomato sauce
  • a tablespoon of olive oil
  • 50 gr carrots
  • 40 grams of celery celery
  • half an onion
  • a clove of garlic
  • a bay leaf
  • ½ teaspoon of sugar
  • 50 ml of water

First prepare the sauce. Heat the oil in a pan and fry the chopped onion, carrot and celery for about 6-7 minutes. I broke the bay leaf into small pieces, after removing the main rib, which is woody, and I put it all here, with the vegetables. Towards the end, about half a minute, I hardened the finely chopped garlic.

Next is the tomato sauce, sugar and water. Boil everything for at least 20 minutes, until the sauce becomes a softer zacusca. All this time, stir in the pan so that the sauce does not stick. Because I wanted it as fine as possible, I blended it. You can avoid the blender part, I'm convinced that Italian hunters have never asked themselves this question.

Preheat the oven to 180 degrees.

Heat the oil in a pan and fry the thighs a little, 8-10 minutes, depending on how big they are. By the way, it would be ideal for the pan to be able to be placed in the oven. If there is no ideal in this case, any pan is good, a baking tray can be used in the oven later.

When the meat is evenly browned, set it aside, and in its place add the peppers cut into long strips, including the hot pepper. Don't skip it, this cacciatore stew is required to be spicy.

Cook the peppers for about 5-6 minutes, you don't need to add any more oil, normally the chicken will already have enough fat left there.

Then the wine, mix well, then the tomato sauce, the finely chopped garlic, mix again, then add water and mix again. Put the chicken, then the olives, the rosemary, cover with a lid and bake for about 30 minutes. If it's not a lid, it's ok with aluminum foil. But in this half hour it must be covered.

After 30 minutes, put the lid aside and leave it in the oven for another 20 minutes to give the chicken that perfect layer of crunchiness. (I know crunchiness is a weird word, it sounds like trivia, so stay tuned.)

Parsley on top and great if you can put more on plates. Usually, with a good bread, it is eaten directly from the horse's snout, from the pan.


Hunting chickens (cacciatore)

Hunting chicken (cacciatore) & # 8211 is an extremely fragrant recipe that makes chicken a star. Although I'm not a fan of poultry, I generally like this recipe, like the one chicken with sour cream, makes me cook it and enjoy it with enthusiasm.

As usual, as with any recipe, you will find variations upon variations. The basic ingredients are: chicken, bell peppers, olives, mushrooms and chopped tomatoes or chopped tomatoes, fresh or canned. If you have these ingredients at home, plus some herbs, it's almost done.
