Stuffed fried bacon balls

Ingredients for 8 servings:

  • ½ tablespoon butter
  • 2 tablespoons finely chopped onion
  • 3 slices of bread, chopped into cubes
  • ¼ cup of grated Cheddar cheese
  • 1 beaten egg
  • ¼ teaspoon of salt
  • ¼ teaspoon of granulated garlic
  • ¼ teaspoon ground pepper
  • 8 slices of bacon

Method of preparation:

  1. Melt the butter in a non-stick pan, then sauté the onion for 5 minutes.
  2. Then take a bowl and mix in it the hardened onion with the diced bread, the grated Cheddar cheese, the egg, but also the spices. Then use your hands to shape 8 balls of equal size, which you will wrap in a slice of bacon - use a toothpick to fix the bacon.
  3. Heat a non-stick pan over medium heat and fry the bacon balls for about 15 minutes, making sure you turn them on all sides.

Potato mini pancakes with mesh and crispy bacon

Ingredients for 2 servings:

  • 350 g of peeled potatoes and finely chop
  • 125 ml milk
  • 1 finely chopped green onion
  • 15 g butter
  • 2 tablespoons vegetable oil
  • 4 thin slices of bacon
  • 2 eggs
  • 2 hands of spinach leaves
  • salt and pepper to taste.

Method of preparation:

  1. Put the potato cubes in a pot of water and a tablespoon of salt, to boil. After the potatoes are cooked (it will take about 20 minutes), let them drain in a sieve and then pass them together with the heated milk, but also with the finely chopped green onion. Season with salt and pepper to taste and then shape the puree into 4 mini-pancakes.
  2. Heat 1 tablespoon of oil in a non-stick pan and cook the mashed potato pancakes for 3 minutes on each side, then remove them on two plates - 2 pancakes each.
  3. Take a clean pan, let it heat up well and place the strips of bacon in it this time. Turn them over on the other side after a few minutes, as soon as you notice that they have browned well and become curly on the edges. Cook for a few more minutes on this side and then take them out on the plate, placing them next to the potato pancakes.
  4. Heat the pan again after wiping it with a paper towel, put the remaining tablespoon of oil in it and fry both eggs. Remove the stitches on the plates, but after dividing the amount of spinach leaves between the 2 plates. You will place the eggs on the spinach bed. Serve immediately before cooling.

Tortilla stuffed with eggs and fried bacon

Ingredients for 2 servings:

  • 1 tablespoon sunflower oil
  • 4 eggs at room temperature
  • 4 slices of bacon, pre-fried in a pan
  • 1 tomato cleaned of seeds and finely chopped
  • ¼ cup of grated Cheddar cheese
  • 2 tortillas

Method of preparation:

  1. Heat the sunflower oil in a pan. Beat the 4 eggs in a bowl with a fork, then put them in the pan and use a spatula to stir continuously.
  2. Place the 2 tortillas on a plate and spread half of the prepared omelet composition on them. Add on top and 2 strips of fried bacon, but also half of the chopped tomato on each tortilla. Season with salt and pepper, finish with grated Cheddar cheese and roll tightly.
  3. Heat a grill pan on the fire and place the two rolls filled with egg and bacon in it, pressing well with your palms. After 1-2 minutes, turn to the other side and repeat the operation. Remove the rolls from the pan, place them on a plate again, cut them in half and serve immediately before they cool. Good appetite!

All these 3 recipes with fried bacon are tasty, but they have a fairly high caloric intake, so it would be good to prepare them occasionally, in no case every day. They are ideal for late weekend mornings, when you feel the need to eat something tasty and allow yourself to indulge in a less healthy dish.   • Half a teaspoon of chilli powder
  • Half a teaspoon of cumin

  • 8 tortillas
  • Sauce sauces
  • A big onion
  • One tomato
  • 5 lettuce leaves
  • 2 bell peppers (yellow. Red or green)

Method of preparation:

Cut the meat into strips and fry them in a pan with oil, well heated. Let the meat take on color for about 10-15 minutes, then set it aside on a plate. Put a teaspoon of oil in the pan and add the chopped onion. When it starts to harden, add the pepper, cleaned and cut in the same way. Separately, in a bowl, combine the spices (salt, pepper, chilli flakes, cumin and chilli powder). After the peppers have softened, add the beef and then add the spice mix. Leave on the fire for another 5 minutes.

Take the eight tortillas, sprinkle each with a little water and put them in the microwave for 30 seconds to warm up. Then, on the tortilla you put salsa, salad, a few tablespoons of the meat and vegetable mix, a few pieces of tomato, and then you fold it like a pancake.

Sandwich with guacamole and crispy bacon

Let's be serious. The sandwiches continue. Because I'm somehow ours newfound love. And because I loved going shopping today and I choose some bacon here, some avocados there and a Cheedar with whiskey over there. I'd like to tell them that I only make them as simple snacks, but I made these with guacamole and bacon as a full-time dinner on Saturday, and no one objected.

Okay, okay, but guacamole and bacon? Yes. Because this week I had some friends visiting and I quickly put on a guacamole that reminded me of the old days. But not only a guacamole sandwich sounded good to me, it clearly demanded something crispy, salty and with more texture. So I pulled the bacon on the stove and paired it with my best guac in a big day sandwich. Or weekends.

  • a well-baked avocado
  • 5-6 Cherry tomatoes
  • half of yellow onion
  • juice of the half a lime
  • little bit parsley
  • salt and chilli flakes
  • 3-4 slices of bacon
  • toast of wholemeal bread

I started with guacamole: I ground the avocado fruit in a bowl, I added the cherry tomatoes cut into quarters, the finely chopped parsley, the finely chopped onion, the spices and the lime juice. Taaa-da, guac.

And then I toasted the bread and bacon at the same time. Toaster bread and bacon on the makeshift grill from panini maker. And when they were both fried well, I mounted sandwich: toast and crunchy, creamy guacamole and full of fresh flavors and crispy slices of bacon. It was kind of rainbow-poetry-on-the-sky-mouth.

Onion and bacon soup

We are already in May, and the cold weather does not want to leave us in any form. You look out the window and see the sun smiling back at you. You think Spring has finally come. It's time for thin clothes. But when the sun is shining, and you have to run to work and you don't have time to change your mind about the outfit? You get home cold and tired, you need something warm to soften you.

I've been through this countless times because I wanted to force the temperature, but I saved myself with kinds of soups only good to enjoy. This time I will help you with a soup that is prepared quickly and does not require complicated ingredients. Onion and bacon soup is not only tasty, but also healthy. But I won't lengthen it and I'll leave the shopping list below.

Ingredients for onion and bacon soup
  • 3 large onions
  • 3 cloves of garlic
  • 50 gr butter
  • 100 ml white wine
  • 60 ml of red wine
  • 400 ml beef soup
  • 4 bay leaves
  • 3 sprigs of thyme
  • 4 slices of toast
  • 100 gr grated smoked cheese
  • Salt and pepper
How to prepare onion and bacon soup:

I started by cutting onions, garlic and bacon. I also laughed at the cheese.

I melted the butter in a pot, and when it got a slightly golden hue, I added the bacon and left it to fry for a while.

I then put the onion and garlic and let them harden for about 20 minutes, stirring from time to time, so that they do not stick to the bottom of the pot. Onions should be glassy and soft.

After 20 minutes and the onion was ready, I added the two types of wine, bay leaves, thyme, salt and pepper. I mixed them and left them over medium heat until the composition boiled.

It's time to add the beef soup. I prepared it in advance, leaving a few bones to boil. If you do not have beef soup, you can put boiled water or chicken soup, but the final taste will not be the same. There are always alternatives if, somehow you are missing a food, it is not a problem.

I boiled the onion and bacon soup, then left it to rest for a while.

In the oven

Meanwhile, I turned on the oven at high temperature (200 degrees) and dried the slices of bread until well browned.

I put the soup in containers suitable for the oven, on top I put the slice of toast, and then I garnished it with cheese, in abundance, because I love cheese. I left the dishes in the oven until the cheese melted.

My onion and bacon soup turned out delicious, and after a healthy portion, my cold and fatigue passed. I sat down on the armchair and enjoyed a good movie.

Vegan BLT sandwiches

Ingredient: 800 g endive, 250 g smoked bacon, 4 cloves garlic, juice of two lemons, 250 g cheese, 100 g cream cheese, salt, parmesan for garnish
